Some mornings, I skip breakfast. I wake up, find my glasses, and head straight for the coffee pot. From the coffee pot, I sit at my desk, and start working. I usually drink coffee until lunch. This morning, I decided to make breakfast while I was drinking my coffee.
Yesterday, I had a few too many cups and didn’t eat until 2PM. I thought I was having an anxiety attack, I was so shaky. I didn’t want that to happened again today.
Three Ingredient Banana Pancakes
Adapted from Carrots –n- Cake
Make 2 Medium or 4 Small Pancakes (Pictured are two small.)
- 1 Small Ripe Banana- Mashed
- 1 Large Egg
- Pinch of Cinnamon (Optional)
- Butter for Cooking
Heat pan over medium low heat. Combined banana, egg, and cinnamon together in a bowl. Add a small amount of butter to pan and add 1/2 of banana mixture to pan.
Cook until bottom becomes brown and easily pulls away from pan. Flip and cook the other side a few additional minutes.
(Do not cook over high heat. They will burn quickly! I’m telling you from experience.)
Serve with warm syrup or your favorite pancake toppings.
These pancakes are very banana-y!! I think next time, I’ll add some nuts for texture.

I really wanted Notre Dame to win, so Alabama fans would shut up!
A while back I read a book and it talked about Krav Maga. I Googled it and found out it was a self defense class. I also found a Groupon for 3 classes in WPB. Tomorrow is my first class. I’m sure by the time I get home tomorrow, I’ll be able to take Huck down!! That is the plan anyways! I’ll let you know how it goes!
I didn’t post the type of car I bought because people are crazy. That is also why I do not post pictures outside my house. Not that I think I’m cool enough to be stalked, but you never know.
The guest post isn’t ready, but hopefully tomorrow they will have it to me. HINT HINT!!
