Chili

It was a cold day in South Florida. We spent most of the day outside, and I still can’t feel my fingers!! 60 is our new 20!

Today, I have another cool weather recipe to share.

Huck and I love Chili! We call this our Chili Gumbo because we add okra. I’m not sure how the okra made it into our chili, but it’s one of my favorite parts.

Chili Gumbo

My chili looks more like chili soup. Huck took most of the “goods” and gave me the juice! (This is another reason we are so great together. He like just the goods and I get all the broth! Match made in heaven!!)

I forgot to add the pictures from my homemade pictures on canvas, I made the other day. I got the idea from Little Bit Funky. I followed the directions, but I had to tape the tissue paper to a regular sheet of paper to print. It would not go through the printer otherwise.

I thought about throwing them away. I could not get all the wrinkles out and ripped them in a few places. I made my own Mod Podge for this project. It may have been to watery. Huck and I both agreed, from a distance, they look nice. They have a rustic look to them.

They were to small for the large wall. I’m going to try and do a few more to make a collage.

Chili Gumbo

Serves 6

Ingredients

  • 1lb Lean Ground Turkey
  • 1 Red Onion (Chopped)
  • 1 Bell Pepper (Chopped)
  • 2 tablespoons Paprika
  • 1 tablespoon Chili Powder
  • 2 teaspoons Ground Red Pepper (More or less depending on taste )
  • 2 teaspoons Ground Jalapeno Powder (More or less depending on taste )
  • 1 tablespoon Ground Garlic Powder
  • 1 teaspoon Cumin
  • 1 can Ro Tel
  • 2 cans Fire Roasted Tomatoes
  • 1 can Lager Beer
  • 1 cup Corn (Frozen )
  • 1 can Black Beans (Drained and Rinsed )
  • 1 can Kidney Beans (Drained and Rinsed)
  • 8oz Okra (Optional)
  • Low Fat Sour Cream (Garnish)
  • Chopped Green Onions (Garnish )
  • Shredded Cheese (Garnish)

Directions

Heat a large pot over medium heat. Add turkey, onions, and bell peppers. Cook until turkey is fully cooked. Drain meat if needed.
Add seasonings to meat and fully combined. Add the rest of ingredients and simmer over medium low heat for 25-30 minutes.
Serve with Sour Cream, Cheese, and Green Onions.

  1. I thought the picture of you 2 on the beach was bigger. They both turned out great even with the wrinkles. Today turned out nice and warm, (60′). Better than 20′s & 30′s. Will have to try the chili recipe on a colder day having steak tonight. Love You
