Yesterday, I felt like I got in a fight with a 6’6” 200+ pound man. Then I remembered, I did!
Krav Maga doesn’t mess around. We started with 15 minutes of cardio, and then we practiced moves to defend ourselves from an attacker. I learned three ways to defend myself if someone attacked me three different ways. Of the 10 people in the class, only two of us were girls. And luckily she was my size.
The instructor wanted to show me that I could defend myself against a larger man using the moves we learned, so I paired up with one of the largest guys in the class.

Just Kidding!! I really was able to take him down. Then, he took me down a few times too. And the girl that was my size, kicked my ass for the next 30 minutes. I liked how the class was physical. You didn’t just practice kicking the air.
I did all of this hungover too!! It was rough!!
Yesterday, I felt like I’d been run over! Every muscle in my body hurt. I’m still really sore today, but it is a good sore. The class was a great workout, and I left feeling like I could take on anyone
I want to go back, but I’m trying to find a location closer to the house. Karate American was over 30 minutes from the house. I know there has to be something closer.
For lunch, I took a break from work, and made lasagna. I planned on using some leftover ground turkey, but forgot. I wasn’t worried about it though. It is Meatless Monday after all.
- 12 Lasagna Noodles- Cooked
- 2 Cups Pasta Sauce (See recipe below or your favorite jarred.)
- 6 oz. Mushrooms- Sliced
- 6 oz. Frozen Spinach- Thawed and drained (I used fresh collard greens and they turned out great!)
- 2 Cups Fresh Mozzarella- Shredded
- 1 Cup Ricotta Cheese
- 1/2 Cup Parmesan Cheese
- Salt and Pepper to Taste
Preheat oven to 350 degrees. Cook Pasta according to package directions.
Add 3/4 cup pasta sauce to bottom of baking dish. Top with pasta. My pan was just big enough for three noodles per layer.
Top noodles with a layer of mushrooms. Season with salt and pepper. Top with noodles and a layer of cheese. Add another layer of noodles.
Combined ricotta and spinach. Spoon mixture over noodles and top with another layer of noodles. Cover with sauce and remaining cheeses.
Cover pan with foil and bake in oven for 35 minutes. Remove foil and cook for an additional 10-15 minutes or until cheese is brown and bubbly.
Easy Homemade Pasta Sauce
- 4 Large Ripe Tomatoes- Peeled and Diced
- 1/2 Cup Red Onion- Chopped
- 3 Cloves Garlic- Chopped
- 1/2 Tbsp Dry Oregano
- Salt and Pepper to Taste
- Crushed Red Pepper to Taste
Add all ingredients to pan. Simmer for 15 minutes stirring often. Taste to adjust seasonings.
Serve and ENJOY!
Huck doesn’t like Ricotta, so I only used it on half.
My lasagna came out flat, but tasted so yummy! I didn’t miss the meat at all.
After spilling a full glass of water all over my paperwork and the couch, I road my bike to the store for ingredients for tomorrows lunch.
