Growing up, my family would go to Golden Buddha (a Chinese restaurant) once a week. My parents would always order Sizzling Rice Soup and Happy Family. I love Happy Family because it has everything: Steak, Chicken, Seafood, and Veggies.
We made Fajitas Saturday night, and I had leftover chicken and steak plus some imitation crab I bought for California Rolls. I was standing at the refrigerator, at lunch time, and instantly knew what I wanted to make.
This is not a traditional Happy Family but really good. I used a spicy stir fry sauce I found at Publix and added pineapple for some sweetness.
Lunch came together super fast today. We’ve been eating lots of salads lately, and I’ve been chopping all the veggies at once so salad come together fast. It makes eating healthier really easy.
I just grabbed a handful of mushrooms, peppers, onions, carrots, and celery and added them to the pan.
