I spent most of my afternoon, watching the news. I can not imagine what the families and children affected by this tragedy are going through. It is a sad day!
Around 4PM, I couldn’t watch anymore. I decided a warm cup of spiked coffee and a little distraction was just what I needed.
Spiked Hot Coffee with Whipped Cream
Makes 1 Cup
- 1/2 Cup Fresh Brewed Coffee
- 1/2 Oz Coffee Flavored Liqueur (Like Baileys or Kahlua)
- 1/2 Cup Chocolate Wine
- 2 Tbsp Fresh Whipped Cream
- Chopped Chocolate for Garnish
Combined Coffee, Liqueur, and Wine. Top with whipped cream and chocolate.
Homemade Stout Beer Marshmallows
Recipe adapted from Confections of a Foodie Bride
Makes about 64 Marshmallows
- 3 envelopes unflavored gelatin
- 1/2 cup Stout Beer
- 1 1/2 cup sugar
- 1 cup light corn syrup
- 1/8 tsp salt
- 1/2 cup water
- 1 tsp vanilla
- Powdered sugar, for coating and dusting
- Cooking spray
Place beer in a bowl of mixer fitted with the whisk attachment. Add gelatin over beer. Swirl bowl to combine.
In a medium sauce pan, heat sugar, corn syrup, salt, and water over medium heat. Stir constantly until mixture reaches 240 degrees.
Added heated sugar mixture in a slow, thin stream into the mixture while on low speed. Once all liquid is added into mixer, increase speed to high and whip for 15 minutes, until thickened and mostly cooled.
Spray a 8×8 pan with cooking spray and coat with powdered sugar. Pour marshmallow into the prepared pan and let sit at room temperature for a least 4 hours or overnight.
Dust your work surface with powdered sugar and turn the marshmallow out of the pan. Using a greased pizza cutter or knife, cut the marshmallows into 1-inch squares (or desired shapes), dusting the cut edges with powdered sugar to prevent sticking.
Store the marshmallows in airtight container with a few additional spoonful of powdered sugar. Shake container to coat with sugar.
The marshmallows soaked up the liquid again. They are still good either way. Huck and I each had a cup by the way. I didn’t drink two! The whip cream was mine! It was so good!!
I don’t have real kids, but I made sure to keep mine close today!
