Sleeping In!

When I say I slept in, I mean, I got up at 8 and laid in bed until around 9 reading. It was glorious!! The past week and a half has been none stop. I worked 6 days, got up to go to Disney, traveled to and from Panama City, and slept on an air mattress for 4 days. Waking up this morning and just laying there was just what I needed.

I am not a morning person. My motivation starts to kick in as the sun goes down, and if I’m not working, I can easily stay up until 1 or 2AM. Huck is the complete opposite. He wakes up around 7AM and jumps right up to take the dogs out. Usually he wakes me up with his singing or when he turns ever light in the bedroom on to find something. Me, I lay in bed for awhile. I like to wake up before getting up. I do not talk much in the morning, and I’m not a fan of loud noise, like, Fox News screaming at me while I eat breakfast (Huck)! I plan on doing it again tomorrow too!

For the most part, today was spent relaxing at home. I went to Publix at one point to get groceries. Since today is Cinco de Mayo, we decided we would make some TACOS for dinner. Surprise Surprise Right?

To change it up a little I decided to make homemadeĀ Guacamole. Huck isn’t a fan of Guacamole, but I asked him to try some since I thought it was so good!

He tried a bit and looked at me and said, “This S**t is Good!!” And he keep eating. He told me I converted him to a Guacamole lover tonight! It made me feel really good.

This recipe makes about 1/2 cup Guacamole.


  • 1 Haas Avocado
  • 1/2 Roma Tomato- Small Diced
  • 1 Tbsp Red Onion- Minced
  • 1 Clove Garlic- Minced
  • 1/2Ā Jalapeno- Minced (More or less depending on how hot you like your food)
  • 1 Tbsp Lime
  • Salt to Taste
  1. Combined all ingredients into bowl.
  2. Stir until combined and desired chunkiness.
  3. Serve with chips.

After dinner, we went to the beach to look at the SuperMoon and look for Sea Turtles. No luck on the sea turtle but we couldn’t believe how bright the beach was. If the turtles were out, we could have easily seen them.

Huck also decided to put his bottle openers on the dogs collars, today, so he could always find one. I’m not sure if he is really smart for coming up with his idea or if we should have a talk.

Now we just need to teach them how to bring us beer! :)
