Homemade Beer Pizza Dough

I live to eat… If you haven’t noticed. I think about food all the time. I wake up and start planning my meals for the day. After my meals are planned, I look at food blogs. Occasionally, I’ll watch cooking shows (my TV use to stay on the Food Network. I’d rather read blogs, now.)

My life revolves around food and I’m OK with that. As long as I don’t start getting fat!

I love Peas and Crayons What I Ate Wednesday because everyone shares my same love for food.

This is What I Ate Tuesday.

Usually, I just drink coffee until lunch time. Yes, I know it’s not healthy… I don’t care. I don’t like to eat while drinking coffee, and I drink a couple cups of coffee in the morning.


For lunch, I made homemade pizza using my Beer Crust Recipe. It’s my favorite. I used half whole wheat flour and half regular flour.

Dinner was just as easy.

Roast Chicken Legs with Green Beans and Mushrooms and Potato Salad. Chicken legs are a staple in our house.

Beer Pizza Dough


  • 4 cups Unbleached AP Flour (I used half whole wheat half regular flour)
  • 1 tablespoon Baking Soda
  • 1 teaspoon Salt
  • 12oz Beer
  • Extra Flour for Dusting
  • Oil
  • Desired Toppings


Preheat oven to 450 degrees.
Shift together flour, baking soda, and salt. Add to a mixing bowl with hock attachment. Add beer and mix until combined and dough forms a ball.
Remove dough from bowl onto a floured surface. Knead 3-4 times and place dough in a greased bowl. Leave bowl in a warm place for 20 mintues.
Knead dough a few more times on a floured surface and shape to desired shape. Place dough on a greased baking dish and precook dough for 10-15 minutes.
Add toppings and cook until cheese is melts and bubbly.

Roasted Chicken Legs


  • 6 Chicken Legs
  • Salt and Pepper to Taste
  • Desired Seasoning


Preheat oven to 400 degrees.
Season chicken with seasonings and place on a foil lined pan.
Cook for 25-30 minutes or until the chicken is cooked through.

Growing up, my family would go to Golden Buddha (a Chinese restaurant) once a week. My parents would always order Sizzling Rice Soup and Happy Family. I love Happy Family because it has everything: Steak, Chicken, Seafood, and Veggies.

We made Fajitas Saturday night, and I had leftover chicken and steak plus some imitation crab I bought for California Rolls. I was standing at the refrigerator, at lunch time, and instantly knew what I wanted to make.

Roasted Corn Salsa

I made this salsa a few days ago for my article for the Abacoa Community Newspaper, and thought I would share it with you guys. This is great with chips, topping for fish or chicken tacos, or as a fresh side dish with some grilled meat. This is also a great dish to take to a party or tailgating because it can be served cold or at room temp. Huck added his Ghost Chili Sauce to his serving. A little to hot for me! I hope you guys enjoy!



Corn Salsa
  Makes about 5-6 cups of salsa
2 Ears of Grilled Corn or 3 Cups Frozen- Thawed 
3 Medium Tomatoes- Diced or 1 Cup Cherry Tomatoes-Cut in half. 
1/2 Red Onion-Diced
1 Bell Pepper- Diced
1/2 Can Reduced Sodium Black Beans- Drained and Rinsed
1/4-1/2 Cup Cilantro- Chopped  
1 Jalapeno- Seeds removed and Finely Diced
1 Lime Juice
Salt and Pepper to Taste
To cook the corn, soak whole husk in water for 15-20 minutes. Remove and drain . Place in microwave for 1 minute per ear. Corn will be very hot when removing from microwave. Remove husk and silk from cob. It should come off easily. Preheat grill or grill pan, and cook corn until outside is  lightly chard. Remove from grill and allow to cool. Using a knife, cut down the corn to remove all kernels from cob. Add to a bowl. 
Mix together all ingredients and serve room temp or place in the refrigerator until ready to serve. 
Baked Tortillas Chips
   Makes one serving: 20 chips (125-175 calories per serving depending on type of corn tortillas used. I try to find corn  
   tortillas with 25-35 calories each)
5 Corn Tortillas- Soft Taco Size- Cut into 4’s
Salt if desired
Preheat oven to 350 degrees. Place tortillas on a baking sheet. Sprinkle with salt if desire and bake for 12-15 minutes until crispy. Serve warm with salsa.
